The Only Chicken Stir Fry Recipe You'll Ever Need

Mmmmmmm. Stir Fry.

Chicken Stir Fry doesn't have to be unhealthy. I use a simple recipe that can always be modified, depending on what vegetables you want to add. 

Ingredients: 2 skinless chicken breasts | 2 Bell Peppers | 2 cups of broccoli florets | 6 Diced Mushrooms | Olive Oil

Spices: 1 tsp - cumin |  1/2 tsp - cayenne pepper |  1/2 tsp - smoked paprika | 1/2 tsp - chili powder (optional)

I'd say this amount is enough for 2 people if they would like 2 servings. 

Before preparing the ingredients, add enough olive oil to a medium-sized frying pan to almost cover the bottom. Then heat the pan using medium / high heat. You'll want to trim the fat from the chicken, and then dice it into bite-sized 2" chunks.

After the pan is heated up, add the chicken first and stir often until they are lightly browned (~ 5 minutes). Then stir in your vegetables. I covered the pan with a lid and let the ingredients cook for about 2-3 minutes. Then I added the spices. I continued to stir everything together for another 3 minutes and voila!

It is optional for you to add a serving or two of white or brown rice. I added some white rice to bottom of my stir fry and added tamari sauce (gluten free). It was DELICIOUS. 

This was a quick meal to make, about 30 minutes total. The ingredients can vary each time you make it. Next time, I think I'll add carrots :)
