Holiday Recipe Series: Roasted Cinnamon Butternut Squash

Ah, the holidays. A time to be surrounded by family and friends, enjoy tasty homemade food, and revisit long-standing traditions. Thanksgiving and Christmas are my two favorite holidays. I love the coziness of the weather, and the traditional dishes that have been in my family for generations. My family is truly blessed with many talented cooks. We take our holiday menus very seriously, so the menu planning always starts early! Thanksgiving in particular is my all time favorite - I could live off of roasted squash, sweet potatoes, vegetables, and pumpkin desserts! Who else is with me?

This recipe for Roasted cinnamon Butternut Squash has been a staple at our Thanksgiving for many years. It’s SO simple, yet so yummy, warm and comforting. I like to toss a few sprigs of fresh thyme on top before serving to give it a little extra color.


4 cups chopped Butternut Squash

1-2 tbs coconut or avocado oil

½ tsp cinnamon

Pink Himalayan Salt to taste


Roasted Cinnamon Butternut Squash



Preheat oven to 400F

Cut butternut squash into 1 inch size pieces (if not using pre-cut squash)

Line a baking sheet with parchment paper

Spread squash evenly on baking sheet

Sprinkle with cinnamon, salt, and coconut/avocado oil

Bake for 40-45 min or until squash is soft golden brown

Optional: Garnish with fresh thyme for a little pop of color!
